Each member brings unique expertise and passion to our organization, promoting health and wellness through the power of nutrition.
This year, we’re honoring our six incredible RDNs by sharing one of their favorite dairy-inspired recipes. Whether it’s a nostalgic comfort food, a nutritious meal prep staple, or a creative take on a classic, each recipe showcases the versatility and nutritional benefits of dairy.
Mary Dickson, RDN, LD – Tropical Greek Yogurt Smoothie
Mary, our Territory Manager for School Marketing in Texas, loves starting her day with a refreshing smoothie. She combines Greek vanilla yogurt with a mix of tropical frozen fruits—pineapples, strawberries, peaches and mangoes—and adds a splash of orange juice. This blend offers a protein-rich, creamy, and delicious breakfast option that her whole family enjoys.
Sara Rose Foreman, RDN, SNS – Overnight French Toast
Sara Rose, our School Wellness Specialist in Colorado, delights in preparing Joanna Gaines' Overnight French Toast from Magnolia Table (pg. 41). This easy and delicious recipe has become her go-to for holiday brunches. To boost its nutritional profile, Sara Rose lightens it up by using half-and-half instead of heavy cream, incorporates Greek yogurt and opts for cinnamon raisin or whole grain bread. These modifications add fiber and protein, making the dish both indulgent and nourishing.
McKensie Montgomery, MDA, RDN, LD – Buffalo Chicken Tater Tot Casserole
McKensie, our School Wellness Specialist in Dallas, Texas, enjoys a warm and spicy Buffalo Chicken Tater Tot Casserole for lunch. This quick and easy dish combines shredded chicken, low-fat cottage cheese, buffalo sauce, ranch seasoning, skim mozzarella cheese and tater tots. Sarah Ryan, MS, RDN, LD – Pimento Cheese Sandwich
Sarah, our Partnerships Manager in Houston, Texas, enjoys the nostalgic flavors of a pimento cheese sandwich, aligning with the retro food trend. She pairs H-E-B jalapeño pimento cheese with her homemade sourdough bread and often transforms it into a grilled cheese for an extra indulgence. To balance the meal, she adds sweet grapes and crunchy cucumbers, creating a plate that's both flavorful and nutritious.
