Vicky Green, Ph.D., RD, LDN

Dr. Vicky Green is currently an Assistant Professor of Nutrition and Dietetics and the Director of the Dietetic Internship at Louisiana Tech University.  Her research interests include the application of nutrition knowledge, pediatrics, food systems management, food deserts, and human access to food.

Marcelo Cavazos, Ph.D.

Dr. Marcelo Cavazos started his teaching career as an English teacher in the Mission Consolidated ISD in 1990. In 1992, he moved to McAllen ISD where he taught English and government. He was named the secondary language arts supervisor for Mercedes ISD in 1993 and became associate adviser for San Benito Consolidated ISD in 1995. Cavazos went to work for the Texas Education Agency Department of School Finance and Support in 1998.

Jenifer Bowman, M.S., RD

Jenifer is a Registered Dietitian, earning her bachelor’s and master’s degrees in human nutrition from Colorado State University in Fort Collins, Colorado. She completed her internship at Indiana University Medical Center in Indianapolis and has worked as a community and clinical dietitian since 1993. Jenifer has specialized as a cardiac dietitian, providing individual nutrition counseling for cardiac patients in Fort Collins, since 1998.  She enjoys cooking (of course!) delicious meals with vegetables her husband grows in their garden.

Angela Nunnery, MD

Dr. Angela Nunnery is on a quest to keep patients healthy and fit through preventive care and managing America's major health conditions – such as hypertension, diabetes and elevated cholesterol – by focusing on a healthy diet and exercise regimen. In 2014, she started Dr. Nunnery's Fitness Challenge, a medical weight loss program with a team approach.  

Chenin Nickel, Ph.D., RDN

Dr. Chenin Nickel has a broad nutrition background, with extensive experience in both clinical and community dietetic settings. Her research expertise spreads across community nutrition, clinical dietetics, food science and sensory science, with several peer-reviewed papers published in these areas.  

Benjamin Edery, MD

Dr. Benjamin Edery believes the key to a healthier community is educating his patients on overall health. He has 40 years of dermatological experience, helping his patients with diseases of the skin, hair and nails.

Anne Vanbeber, Ph.D., RDN, LD, FAND

Dr. Anne VanBeber, a nutrition educator for over 30 years, is a sought-after expert and author who has been quoted in Better Homes and Gardens, Cooking Light, Yoga Journal, Women’s Health and more. She currently teaches courses at Texas Christian University, including food preparation, meal management, and food and culture. Anne has also led study abroad programs in Seville, Spain, with a focus on food insecurity.

Meghan Windham, MPH, RD, LD

Meghan Windham, MPH, RD, LD graduated from Texas A&M University in 2008 with a Bachelor of Science degree in Nutritional Science. She obtained her Master’s in Public Health and completed her accredited dietetic internship at the University of Texas School of Public Health-Houston. Meghan is a Registered and Licensed Dietitian and is actively involved in the Mid-East Texas Academy of Nutrition and Dietetics (METAND), Texas Academy of Nutrition and Dietetics (TAND) and Academy of Nutrition and Dietetics (AND).
